May Days


I know, I know. Everyone does the “30 Days of _____”…right?  Well, yes, they do. And every blogger than does it is ON. POINT. Usually a person will partake in something for 30 days, whether it is a healthy eating regimen, yoga poses and meditation mantra’s, or a “Lenten” give-it-up type of promise.  These types of exercises strengthen our thankfulness for what we have in our lives that we take for granted. Lately, I have been feeling like I have SO much to be grateful for, yet I do not take a single moment in my day to slow down and actually reflect on these amazing things. So here comes the fun part…

There are exactly 30 days left in May. Perfect. Here go my 30 Days of Gratitude. Every day, I am going to post something that I am grateful for… something random, funny, silly, lovely, beautiful, quirky, or personal to me. The little things….the things that we forget are so wonderful in our days.

ALL of my favorite things… right? FACT. When people use the statement “it is such a small world”, well, it REALLY is. Okay so enough of my rambling, I would rather give you the down-low on what is now trending in my shower: Layered Chocolate Lavender Body Scrub. How can you resist a scrub made with real sugar, coconut oil, lavender oil, sesame oil, raw honey, and the best part…cocoa powder?!

“Kavocado” Green Smoothie

Yup, just made up the name for this smoothie, but I will give credit where credit is due! The LifeBar in Louisville, KY, is one of my favorite spots for a fresh juice, smoothie, or good ole’ dose of wellness with a wheatgrass shot. This is a spin-off of their Avocado Dream. 

Kavocado Green Smoothie

½ cup honeydew

¼ avocado

½ cucumber

½ lemon

handful of spinach

1 cup kale (packed)

½ inch ginger

½ cup coconut water

1 scoop protein powder (hemp, pumpkin or pea works great!)

pure water/coconut water

1 tsp maca powder

dash of cinnamon

dash of turmeric

dash of cayenne (if you want spicy)

– Raw/Organic (you can start with salted at first, but unsalted is better for you)

7) Sweet Potatoes

-NATURE’S MOST WHOLESOME FOOD! (in my personal bias opinion 😉 )

-very high protein and fiber content

Choco-Oat Banana Protein Muffins

I have shared this recipe before, but I played around with it a bit, thus making it even BETTER! Round 2 of these scrumptious lil’ snacks!

Choco-Oat Banana Protein Muffins {no sugar added}



1 cup rolled oats

1/3 cup coconut flour

1 scoop chocolate protein powder (I like Vegans Proteins +)

2 large egg whites

2 small very ripe bananas, mashed

1 small handful of blueberries

1/2 cup unsweetened applesauce

1/3 cup almond milk

1 tsp maca powder (Navitas Naturals Raw Maca Powder)

1 tsp chia seeds

1 tbsp cinnamon

1 tbsp PB2

1 teaspoon vanilla extract

1 eyedropper of Liquid Stevia Extract


Preheat oven to 400 degrees F. Grease muffin pan (I like the 6-cup muffin pans for larger sized muffins)  with coconut oil or coconut oil spray (Trader Joe’s has the spray= super convenient!) Bake for approximately 10-12 minutes. Make sure to watch them closely so they don’t burn or get crispy…you want them fluffy and moist!
