Lumping 3 days together: 30 Days of Gratitude


Going against the norm and lumping 3 days together? Yup. Well, to be honest, I opted to take the quick weekend away from this electronic box that seems to occupy a majority of my time lately…my laptop. The thought of updating little tiny posts on my phone didn’t feel right to me, nor did it feel like I was giving the effort that I would to actually yield my gratitude for specific aspects of my life. That being said, the only thing I really feel like doing right now is recapping my favorite things I am thankful for at this current moment…

Day Twenty-Two: 30 Days of Gratitude


Choco-Oat Banana Protein Muffins {no sugar added}

  • 1 cup rolled oats
  • 1/3 cup coconut flour
  • 1 scoop chocolate protein powder (I like Vegans Proteins +)
  • 2 large egg whites
  • 2 small very ripe bananas, mashed
  • 1 small handful of blueberries
  • 1/2 cup unsweetened applesauce
  • 1/3 cup almond milk
  • 1 tsp maca powder (Navitas Naturals Raw Maca Powder)
  • 1 tsp chia seeds
  • 1 tbsp cinnamon
  • 1 tbsp PB2
  • 1 teaspoon vanilla extract
  • 1 eyedropper of Liquid Stevia Extrac
  1. Preheat oven to 400 degrees F. Grease muffin pan with coconut oil or coconut oil spray Bake for approximately 10-12 minutes. Make sure to watch them closely so they don’t burn or get crispy…you want them fluffy and moist!

Day Twenty: 30 Days of Gratitude


Today, I got caught up in the unknowns, the what-if’s, and the “stuff”. Yes, the “stuff”. The “Minus 18″….

Let me explain…At staff retreat, we watched a TED Talk on how we communicate to each other and our youth. For example, when a student gets a 2 out of 20 on a paper, it is easy to sit there and criticize the 18 things that went wrong, and how awful it is to have 18 failures. OR, we can focus on the 2 things done right. The “plus 2”.

Yes, it is beneficial to assess our weaknesses and learn from them, however, take a moment to think about how we do that… do we bring each other down by pointing out all the negatives, every single day? Or do we focus on the “plus 2”?

You decide. Today, I focused on the wrong things. Until I remembered THIS BLOG. And stopped. Shook myself, stopped beating myself up for what was going “wrong”, and I opened my eyes to see what REALLY matters in life… friendships. families. love. teams. communication. passion. talents. giving. caring. being. doing. creating. permanent smiles. endless laughter for no reason. bear hugs….I could go on and on.
